  • 4 teaspoons of pure corn oil
  • ¾ cup of warm milk
  • At least ½ cup of warm water

Preparation Steps for the Dough

  1. In a mixing bowl or electric mixer, combine the sifted flour, instant yeast, baking powder, salt, and sugar. Mix well.
  2. Gradually add in the warm water, milk, and corn oil to the dry ingredients. Blend for about ten minutes until the mixture forms a soft and cohesive dough. If the dough is sticky, you may incorporate a little more flour. Alternatively, you can knead the dough by hand if a mixer is unavailable.
  3. Transfer the dough to a deep bowl greased with a little oil, cover it securely, and let it rise in a warm place for at least one hour, or until it has doubled in size.
  4. Once risen, divide the dough into small round portions and arrange them on a large plate, keeping them close together. Take one piece of dough and roll it out into a round shape.
  5. Grease a baking tray and place the rolled-out dough onto it. Spoon in a generous tablespoon of filling until it’s adequately filled.
  6. Cover the tray and let it rest for 15 minutes before baking.
  7. Preheat the oven to medium heat and bake for approximately 15 minutes.
  8. Once ready, remove the tray from the oven and serve the freshly baked Ṣfiḥa on a serving plate, accompanied by a cup of tea.

  • 500 grams of finely minced meat (preferably beef)
  • 1 finely chopped onion
  • 2 teaspoons of minced garlic
  • 300 grams of diced tomatoes
  • 1 green chili pepper, sliced
  • ½ tablespoon of finely ground chili spice
  • 6 teaspoons of pure olive oil
  • 2 teaspoons of melted ghee
  • 2 teaspoons of tahini
  • 2 teaspoons of lemon juice
  • 2 teaspoons of white vinegar
  • 2 tablespoons of salt
  • 1 teaspoon of ground spices
  • 1 tablespoon of black pepper
  • ½ tablespoon of meat seasoning
  • 1 tablespoon of mixed spices
  • ¼ tablespoon of cardamom
  • ¼ tablespoon of ground cinnamon
  • A pinch of nutmeg
  • 2 teaspoons of toasted pine nuts

  1. In a medium bowl, combine the green chili, olive oil, minced garlic, white vinegar, lemon juice, and chopped onion. Mix well with a fork and set aside for at least one hour to allow the flavors to meld.
  2. In a large bowl, add all the filling ingredients and mix thoroughly, ensuring that the spices are evenly distributed within the minced meat.
